Low-carbohydrate granola sweetened with Green Sweet Syrup Gold
What do you need:
- 200 grams of nuts / seeds
- (I used 100 grams of almonds,50 grams of sunflower seeds and50 grams of pumpkin seeds) ,
- 150 grams of coconut flakes,
- 2-3 tbsp pumpkinspice,
- pinch of Himalayan salt,
- 2 tbsp extra virgin coconut oil (melted)
- 1-2 tbsp Green Sweet Golden Syrup
No pumpkinspice at home? Cinnamon, gingerbread or biscuit spices are also possible.
The almonds can also be replaced with other nuts or make your own mix of nuts and seeds.
This is how you make it:
Line the baking tray with parchment paper and preheat the oven to 150 degrees.
Place all dry ingredients in a large bowl and toss well to combine.
Pour the melted coconut oil into the nut-seed mixture and stir well. Add 1 tbsp golden syrup. Trial here or is it sweet enough, otherwise, add a 2nd scoop.
Divide the mixture over the baking tray and slide into the oven. Your granola is ready after 10 minutes.
Let it cool down well and then put it in a sealable jar. If you don't let the granola cool down properly, it won't get that nice and crunchy.
Delicious as a snack, sprinkle some over your (vegetable) yogurt, delicious with some fresh fruit or over your pancakes.
