Carrotcake muffins
What do you need?
- 200 g flour or oatmeal sifted
- 200 g carrot grated
- 3 eggs
- 150 g cottage cheese
- 3 tsp baking powder
- 1 tsp biscuits
- 30 ml sunflower oil handful walnuts in pieces
- 50 g green sweet brown
- 100 g dairy spread
- 2 tsp lemon juice
How to make?
Add all dry (flour, baking powder and spices) ingredients together in a mixing bowl and mix well.
In another bowl, beat the eggs and then add them to the flour with the quark, carrot and sunflower oil. Mix well.
Add the handful of walnuts and mix well again.
Preheat the oven to 175℃ top and bottom heat.
Pour the batter into the 12 muffin tins. And bake the muffins in 12-15 minutes golden brown and done. Check this by pricking it with a skewer. Does it come out dry? Then they are done.
Let the muffins cool. Meanwhile, mix the 2 tsp lemon juice with the dairy spread. Divide this over the muffins. Decorate as desired with, for example, grated carrot!
