Pumpkin Protein Cookies
What do you need for 10 cookies :
-230gr almond flour
-30gr pea protein
-2 tablespoons melted and cooled coconut oil
-1 egg
-60gr pumpkin puree
-1 tsp baking powder
-60gr Greensweet Brown
-40 gr chopped pecan nuts
-40gr raisins
-1 1/2 tsp pumpkin spice
- pinch of salt
This is how you make them:
Preheat the oven to 175 degrees. Line a baking tray with baking paper.
In a medium bowl, combine pumpkin puree, coconut oil, egg, and Greensweet Brown.
In another bowl, combine almond flour, egg white powder, baking powder, pumpkin spice and salt.
Add wet ingredients to the dry and use a rubber spatula to mix until you get a cookie dough.
Then fold in the chopped pecan nuts and raisins.
Roll the cookies in your hand into a ball and place on the prepared baking sheet.
Then gently press with the palm of your hand to flatten them a bit
Bake the cookies for 12-15 minutes.
Let cool completely before eating.
