Healthy chicken kebab
What do you need 2 people:
-3 chicken fillet, cut into bite-sized slices
-1 red onion
-3 tbsp olive oil
-4 garlic gloves
juice of 1 1/2 lemon
zest of 1 lemon
herbs: 1 1/2 tbsp cumin, 1 tsp turmeric, 2 tbsp paprika, 1 tbsp ground coriander, 1 tsp cinnamon, 1 tsp cayenne, 1 tbsp ground cardamom, salt and pepper to taste
Garnish:
Fresh cilantro, sliced radish, pomegranate seedsit
This is how you make this recipe:
Slice the chicken, cut the red onion and garlic. Add to a large bowl and add all other ingredients except the garnish ingredients. Let the chicken marinate in the refrigerator for at least 1 hour, ideal to do this the day before. Preheat the oven to 200 degrees.
Add the marinated chicken and onions to an oven dish and bake for 30 minutes. Serve with (gluten-free) pita bread.
